Incredible Baked Meatballs

So it has been quite awhile since my last post… I don’t actually think I have posted anything all summer.  But this is September (well the end of September) it is kinda still the start of the new semester, and with that will be a new chapter for my blogging.  My life has changed in many ways over the summer and I am excited about all of it.  Now I have some special who I love to cook for and who loves when I cook for him.   School is keeping me busy and I am trying to squeeze in time to do everything else let alone updating my blog.  But Alas! I will be posting every week or two with the new recipes I try. 

I am currently baking meatballs, incredible baked meatballs to be exact.  Here is the recipe!!

1 pound of ground beef.
2 eggs, beaten with 1 cup of milk
1/2 cup grated parmesan cheese
1 cup bread crumbs (panko)
1 small onion (minced)
2 cloves garlic (minced)
1/2 tsp. oregano
1 tsp. salt
1/4 c minced fresh basil

Mix all ingredients with hands. Form into golfball size meatballs.  Bake at 350 degrees for 30 minutes. 

I didn’t have fresh garlic or basil so I used powdered, hopefully mine are just as good as the recipe I found. 

I will post a picture as soon as they are finished baking.  And let you know how they taste :)
